Methodical Coffee opened on February 11, 2015 with pennies in the bank. We opened with a line out the door that stayed out the door until we closed. We believe that any successful business is built upon three pillars: exceptional product, customer service, and experience. We tirelessly work to perfect those three pillars.
Ixlama is a coffee that does it’s job and does it well. An approachable work-horse, this coffee appeals to the jaded coffee drinker and the enthusiastic novice alike. We roast this coffee to let it’s round, clean sweetness shine through, and frequently find notes of apple, chocolate, and caramel in the cup.
Where it's from
Ixlama is a coffee born out of collaboration. It is the culmination of work by over 100 family producers in the Guatemalan municipalities of San Pedro Necta and La Libertad in the department of Huehuetenango, a region known for rugged landscapes and high elevation. The crop, consisting of half Bourbon and half Caturra varietals, is shade grown and then sorted and milled at Transcafe’s mill at Caserio Teogal Adea San Martin. The mill uses “guardiolas”, a coffee dryer patented by a Guatemalan resident in 1872, after coffees are sun-dried on cement patios.
Olo & Co. Chocolates
All about the Chocolate:
Delicious thin leaves of 70% cocoa chocolate with a touch of flor de sal, inside a metallic case decorated with classic posters of the Chocolate Amatller brand. Made following the traditional method of selection, roasting, refining and conching. These fine leaves are characterized by their intense flavor that is long in the mouth with a toasted note. They come packaged inside an airtight Thermo sealed tray that limits oxidation and guarantees freshness until the moment of eating. Ideal to give or to share.
